Most commissions come back to one of these three lineages. Read them like a map of my craft.
The Fally Series
My most architectural piece to date. Eight tiers, a vertical silhouette that reaches almost two metres, and close to 150 wafer-paper flowers shaped one by one. Each petal was cut, curled and dried before assembly. More than sixty hours of work inside the atelier, then a careful transport and an on-site reassembly lasting another three hours. The Fally silhouette is now my technical signature. Couples who see it ask for its cousins, never its copy.
Champlatreux Commissions
A series of cakes built for weddings held at Château de Champlatreux, the Louis XV estate north of Paris. The architecture of the château, its stone balustrades, its shell motifs, its panelled salons, informs the sugar paste ornamentation. I read the heritage of the place and translate it into tiers, medallions and piped lace. French ancien régime, rebuilt in sugar. These commissions stay measured, never theatrical. The château does the speaking.
Ferrières Creations
Cakes designed for the Rothschild estate at Ferrières. The scale of the ballroom asks for proportion, so these pieces run taller and wider than usual. Baroque detail, gilded accents kept deliberately restrained, volumes that hold their presence across a thirty metre room. I sculpt the ornament to echo the ceilings of the château, the silver, the stucco. Ballroom-worthy, without competing with the room itself. A quiet weight at the centre of the dinner.
Every commission is a sculpture designed from scratch for the couple and the venue that will hold it. Nothing is pulled from a catalogue. Nothing duplicated.
