A Riviera wedding is one of the most beautiful settings in the world. It is also one of the most demanding. Outdoor terraces over the Mediterranean. August heat past 35°C. Receptions that stretch through golden afternoon into evening. In this environment, most wedding cakes simply cannot survive.
Buttercream softens. Ganache melts. Fresh cream collapses. Sugar paste does none of these things. It is the only medium that holds its architectural integrity in high heat and humidity. That is precisely why it has been my exclusive technique since I began.
I sculpt each cake at my Parisian atelier over two to four weeks. Then I travel to the Riviera myself, to Nice, Cannes, Antibes, Cap Ferrat, Èze, and place the cake on-site, adjusting every detail before your guests arrive. Nothing is left to chance. Nothing is left to a courier.
The result is a sculpture that looks exactly as it did the day it was finished. Through the ceremony. Through cocktail hour. Through every photograph. Until the very last slice.

Villa Ephrussi de Rothschild
A rose-pink villa perched between two bays on the Cap Ferrat peninsula. Formal gardens descend toward the sea. A setting that calls for a cake of equal refinement: pale, architectural, timeless.
Château de la Chèvre d'Or
Perched 400 metres above the Mediterranean in the medieval village of Èze. One of the most photographed venues on the Côte d'Azur. A sugar paste sculpture here becomes part of the landscape: light, layered, luminous.
Domaine de la Croix
Thirty hectares of Provençal vineyard sweeping down to the sea between Saint-Tropez and the Îles d'Or. Outdoor receptions under the vines, the Riviera light low and golden. A setting that deserves a cake built to last until dark.
Castel Bay
A Belle Époque estate facing the Baie de l'Almanarre, with an outdoor amphitheatre, an Art Déco staircase, and three hectares running to the sea. I have worked at Castel Bay and know the way the late afternoon light hits the stone before the ceremony begins.
From first conversation
to the Riviera
I begin with a conversation about your vision: your venue, your aesthetic, your flowers, your story. Nothing is generic. Everything starts with you.
I develop the concept: silhouette, tiers, botanicals, palette. Every element is considered in relation to the Riviera light, your venue, and the season of your wedding.
Two to four weeks of atelier work in Paris. Each sugar flower is hand-built petal by petal. Each tier is assembled, finished, and inspected with jeweller's precision.
Ange travels to your venue personally. The cake is transported in custom packaging designed for long-distance journeys, ensuring nothing shifts in transit.
On your wedding day, I assemble and place the cake on-site. I leave only when every detail is perfect, so that when you see it for the first time, it takes your breath away.

Do you travel to the French Riviera?Yes. I travel from Paris to the French Riviera for every commission on the Côte d'Azur. I handle transport personally and place the cake on-site at your venue, ensuring it arrives in flawless condition regardless of the distance. There are no intermediaries and no couriers. From atelier to reception table, your cake is in my hands.

Is sugar paste suitable for hot Mediterranean weddings?Sugar paste is the only medium that is. Unlike buttercream, ganache, or fresh cream, sugar paste does not melt, slump, or lose structure when temperatures rise above 30°C. This makes it the only reliable choice for outdoor summer weddings on the French Riviera, where afternoon heat is a constant. I use sugar paste exclusively, and this is precisely why.

What venues on the Riviera have you worked with?I have created cakes for iconic Riviera venues including Villa Ephrussi de Rothschild on Cap Ferrat, Château de la Chèvre d'Or in Èze, and Domaine de la Croix in Croix-Valmer, among others. I am open to all venues along the Côte d'Azur, from intimate properties in the arrière-pays to grand estates overlooking the sea. How far in advance should I book for a summer Riviera wedding?I accept a very limited number of commissions each year so each piece receives my full attention. For summer dates on the French Riviera, particularly July and August, which are among the most sought-after, I recommend reaching out 8 to 12 months in advance. If your date is sooner, it is always worth enquiring. Cancellations do occasionally arise.

What is the cost of a luxury wedding cake on the French Riviera?Each commission is bespoke. Pricing is on consultation, scaled to complexity, number of tiers, and quantity of hand-sculpted sugar flowers. Travel to the French Riviera is included in every Riviera quote. Can you create a cake inspired by Mediterranean nature: lavender, olive branches, sea colors?Mediterranean botanicals are among my favourite references. Lavender sprays, olive branches with hand-formed leaves, sea anemones, bougainvillea, wild rosemary, and the muted blues and terracottas of the Provençal landscape: every detail can be hand-sculpted in sugar paste to reflect the world your wedding inhabits.
